Curry paste is a convenience ingredient which can be used to add spiciness but also further taste, instead of using curry powder and various other curry-related ingredients.


Basic curry paste usually contains ghee (at least theorhetically, it seems less common in western variations(verify)), curry powder, vinegar.

Further ingredients and flavouring can make it a specific type of curry paste, in which case it often contains garlic, chili peppers, shallots, lemon grass, salt, and more.


Curry pastes also regularly contain things like fish sauce, kaffir lime, cardamom, soy sauce, and other flavouring.


Probably best known are red and green, and also yellow curry paste.

Red curry paste

Red curry paste usually contains red chili peppers, lemon grass, garlic, shallot, ginger, coriander, trassi, oil, and some cumin.


Green curry paste

Green curry paste has much the same ingredient list but uses green chili peppers, uses sweet basil and a little sugar, and uses more of ingredients like garlic, ginger, kaffir lime and such.
