Lemongrass (lemon grass) refers to various members of a genus of various grasses, some of which can be used as a herb.


It often refers to Cymbopogon citratus (also serai), sometimes to Cymbopogon flexuosus (also Cochin grass, Malabar grass), and occasionally others.


Both comes in long stems, and is often bruised and cooked along for its taste and then removed.

You can use most parts, though you don't want the dry leaves or the bulb.

It is up to your taste whether you want to exclude the green, somewhat more woody-tasting part.
