Onion often refers to the common (white) garden onion, Allium cepa, though can also refer more generally to a number of related plants in the Allium genus.

The eye-tearing effect when cutting onions seems to come mostly from the root of the onion. If you work around it and cut that last, the effect is less heavy.


Onions brown faster with salt.


Onions are occasinally soaked in water (optionally with lime), usually after slicing, may lessen its bite a little, often for salads and raw eating.

Soaking in milk is similar, and may help it to be crispier.

Soaing in vinegar and spices () is done for different taste
