Borscht (or borshch) refers to a number of soups with mostly vegetable filling, though it may have beef stock and sometimes contents.

Borscht is often hot and is somewhat like stew.


Borscht is known in various countries in Eastern Europe and Northern Asia, and the contents vary by location - and history; while in the west we think beets, this is not at all univeral.

Russian borscht focuses more on cabbage, carrots, and beets,

Ukrainian borscht is more about tomatoes and potatoes (and less about the beets now).

Cold borscht is also widely eaten in some areas, as a refreshing soup, for example on warm days(verify).
