Fenugreek (Trigonella foenum-graecum) can be used as a

herb (dried or fresh leaves)
spice (seeds)
vegetable (leaves, sprouts)

It has a sweet smell, and a sweet, nutty flavour.

It is most associated with Indian cuisine, but also used in Turkish, Iranian, Georgian, Egyptian and other dishes
