Chives are part of the onion family, a plant with purple flowers. You eat the leaves, which resemble are long, thin reeds.
Their taste like onion, but much milder.
Chives are often used as a milder alternative to onion or garlic, and also in soups, sauces, dips, salads, in omelettes, in some stews, to vary onion or leek taste, and for garnishing.
Chives lose most of their taste when dried, which is why it is usually sold fresh.
Chives are fairly easy to grow yourself.
