Capers are the salted or pickled buds (unopened) of Capparis spinosa.

They have a fresh sour taste, used in in Mediterranean cuisine (such as Sicilian and Italian), in various sauces, along with fish and eggs, and on pizzas. They are sometimes used as olive substitutes.

The taste is fairly strong, so capers are often a minor ingredient for interesting taste variation.

For example, capers are used in pastas, regularly seen combined with olives.
