Masala generally means seasonings (and is a word seen in a few languages, with more varied meaning).


Dry masala tends to be a spice mix, possibly in ground or more in a stored form, wet masala can include ingredients like tomatoes, onion, etc.


Garam masala roughly means 'hot spices', and is more specifically Indian.

There are a bunch of other named masala mixes that are more local.
